Strawberry Dumplings

 Ingredients for 6 to 8 dumplings:

      12 dag flour (smooth)

      2 tbsp soft butter or margarine            

      2 tbsp icing sugar

      1 tbsp semolina

      20 dag curd cheese

      1 pkg vanilla sugar

      1 pinch of salt

      1 egg

      4 tbsp breadcrumb

      (4 tbsp ground poppy seeds)

      2 tbsp icing sugar

      3 tbsp oil

       vanilla sugar

 Recipe:

Put the ingredients into a bowl and knead. Leave the dough to rest. In the meantime you can wash the strawberries, shake up until dry and remove the stalks with a knife. It is possible to enfold strawberries in crystal sugar or sprinkle icing sugar on top, depending on how sweet the strawberries should be.

Heat oil in a frying pan. Brown the breadcrumbs slightly. If the frying pan is too hot, turn down the heat and remove the pan from the stove. If poppy seeds are preferred rather than breadcrumbs, the seeds must be browned lightly in a frying pan. Put water into a saucepan, salt the water slightly and bring it to the boil.

Lay the dough onto a slightly floured work surface. Knead the dough with your hands. If the dough is too soft, add some flour so it does not stick.

Roll the dough out eventually and cut out 2 cm lengths. Put flour onto both hands and press one strawberry into each piece of the dough. Seal the dough of dumplings with the fingers. Form even and round dumplings by placing the dough between both hand palms.

Lay the dumplings into boiling water and turn down the heat. The dumplings are ready when they start to float on the top.

Puree the rest of the strawberries and add 2-3 spoonfuls of sugar. Take out the dumplings with a ladle or a sieve. Roll the dumplings in breadcrumbs or poppy seeds. Place the dumplings on a fruit sauce and sprinkle sugar over the top.

 

Bohemian  potato Soup

Ingredients for 4 people:

  • 600 g potatoes
  • 200 g of root vegetables (carrot, parsley, celery)
  • ½ onion
  • 80 margarine
  • 2 tablespoons of flour
  • 1 handful of mushrooms (dried wild mushrooms)
  • 2 cloves of chopped garlic
  • salt
  • 1 tsp of sweet paprika
  • 2 tablespoons of marjoram
  • chopped parsley

 Preparation:

Soak the mushrooms in ¼ l of warm water, which you later will use for the soup. Peel the potatoes and cut them into cubes. Peel and chopped the onion and root vegetables into small pieces. Heat the margarine and mix it with the flour into the dark roux. When it is ready, mix it with a little water and stir it to be soft and without any clumps. Pour it into the pot with warm water and mushrooms; add the cut potatoes, vegetables and seasoning (except parsley) and boil it about 15 minutes.

 Sprinkle with parsley and serve it.

Gingerbread

 Ingredients:

  • 1 cup of plain flour
  • ½ cup of sugar
  • 2 eggs
  • 1 gingerbread powder
  • half cup of oil
  • 1 cup of milk
  • 2 tablespoons of cocoa
  • it is possible to add honey, raisins and nuts

 Stir all ingredients till it is smooth and pour it into the pan. Bake it in the oven (160 °C).

 Coconut biscuits

 Ingredients:

 200 g grated coconut, 150 g powdery sugar, 2 eggs

Preparation:

Mix all ingredients and make little heaps on the pan. Bake in low temperature till it´s get slightly brown.

Cabbage soup with a pepper sausage

Ingredients:

Sour cabbage, pepper sausage, onion, garlic, sweet and hot pepper, 2 spoons of soft flour, 2 dcl of cream or milk, 4 potatoes, salt, cumin

 Preparation:

Chop the onion and fry briefly with sliced garlic. Then add the cut sausage and cabbage and fry briefly again. Pour 1 l of water and boil about 30 minutes. Peel potatoes and cut them into cubes; boil them till soft with cumin. When it´s ready, add it including water to the boiling cabbage (soup). Whisk flour with milk (cream) and pour it into the soup. Salt it and add a stock cube if you like.

Potato cakes

Ingredients:

1kg potatoes, 5 garlic cloves, salt, pepper, cumin, 2 eggs, 60 g flour, 60 g semolina, milk,, marjoram, oil fro frying

If you like you can add smoked meats.

Preparation:

Grate potatoes and drizzle by milk (otherwise they get brown), add pressed garlic, salt, pepper, cumin, eggs, flour and semolina (thanks to it they are crunchy), marjoram and smoked meats if you like (it is not necessary).

Mix everything and fry on the pan as griddle cakes.

Fried cheese

Ingredients:

 4 thick slices of Swiss cheese, 2 eggs, breadcrumbs, flour, oil

tartar sauce: sour cream (or mayonnaise), chopped onion and pickle, mustard, pepper, salt and lemon juice

 Preparation:

Bread the cheese slices in flour, mixed salted eggs and breadcrumbs (it is better to do it twice otherwise cheese can spread) and fry on the pan with oil till brown.

Serve with potatoes (mashed potatoes, chips) and tartar sauce.

Lost chicken medallions

 Ingredients:

4 portions of chicken breast, ground pepper, salt, oil for frying

 batter: 2 dcl milk, 1 egg, 2 tablespoons of chopped canned mushrooms slices, 1 table spoon of fine grated cheese, flour

Preparation:

Mix milk, egg, mushrooms, cheese, flour and salt and prepare thick batter. Slice the chicken meat into medallions, tenderize them softly, salt and pepper them. Dunk them into prepared batter and fry slowly on both sides. Serve them with mashed potatoes and vegetables.
